I've been wanting to get a trio for quite a while now. Anyone have experience with these fish? I know they are shy and picky eaters. I am wondering if others have had success.

A good idea to buy 5 if you want three. They don't acclimate very well, and initial mortality rates are kinda high. An automatic feeder is good for these fish, they have a very short digestive tract, so small frequent feedings are recommended for long term health. Subdued lighting or at least many shady hiding places are a must.

Most don't make it long term. You'll be lucky if they last more than 6 months.
While I can't speak for you, it's just too much work for a fish. I like to put my time/energy into the corals and keep just low maintenance fish.
