Does anyone use an RO/DI unit in an apartment, and if you do, how do you have it set up?
I may be looking to by one since I'm upgrading to a 90 and am getting tired of buying water from the store

Just get a saddle valve and attach it to the water inlet under the sink. You can close it off when you move out or add a valve.

what exactly is a saddle valve, and would it require that I take apart the plumbing under the sink?
Would this just be run to some sort of storage container?

i live in an apartment, and have an ro/di unit. it all depends on how your sink is hooked up.
if your sink has copper soldered right up to the faucet, a saddle valve will be the only real good way to do it, and not upset your signifigant other with hoses all over everwhere. however, commonly, the faucet inlet pipes have threads on them.. in wich case, you get a threaded T adaptor, unscrew the cold water pipe from the cold water side of the faucet, put this T adaptor inline, adapt down to 1/8" plastic water line, and away you go. your RO unit will now have constant water, allthough it is cold water. For the waste line, i have my tube running into my sink drain, however there might be a way to run this into the disposal, if there is any kind of a port you could use.

go to the filter guys website and order the sink adapter, or better yet call them and ask them what they think you should do. They are super customer oriented.

I keep mine under the sink in the cabinet. I have a 30 gal tub that sits next to my tank that I ran hose to. Once a week I just hook it up to the sink and fill.

Does your apartment have washer/dryer hookups ? If so that would be easiest to just buy a Y off the cold water to your washer and stick your waste tubing in the washer waste line out.
If you don't they make a quite disconnect fitting that will screw into the threads of the little water strainer piece of a faucet. When you move out you simply just put the original strainer back on. When you not using the ro/di you just slip it off and store it.
